Egg and Drumstick leaves scrambled

One of my favourite dishes. My mom used to prepare this since drumstick leaves are one of the favourites of my father and more over it was lavishly available at home. Many dishes were prepared with drumstick leaves as one of the ingredients like dhal curry, cutlets, dhal vada with drumstick leaves, stuffed roti, dosa, etc.

Ingredients:

  • Drumstick leaves – handful
  • Egg – 2 no
  • Onion – 1, small size finely chopped
  • Green chilly – 2 no, finely chopped
  • Coconut – 2 tbsp, scrapped
  • Chilly powder – 1/4 tsp
  • Turmeric powder – 1/8 tsp
  • Cumin seeds – a pinch
  • Garlic – 2 flakes, crushed
  • Seasoning:
  • Cooking oil – 2 tsp
  • Mustard seeds – a pinch
  • Dried red chilly – 2 no, halved

Method of Preparation:

  • Rub coconut, turmeric powder, chilly powder, garlic, cumin seeds with a pinch of salt and a tbsp of water
  • Heat oil in a broad pan, add mustard seeds and add dried red chilies halved when mustard stop crackling
  • Add finely chopped onion and green chilly with a pinch of salt
  • Add coconut mixture and fry till the mixture is dry and stir in washed drumstick leaves
  • Add a pinch of salt and cover and cook for a 1 min over simmering
  • Beat egg well with a pinch of salt and turmeric powder and stir in with the leaves
  • Cover and cook for 1 min over simmering, remove the lid and start scramble the mixture until egg and leaves form small lumps

Serve it hot with rice or roti of your choice

Medicinal uses of Drumstick leaves:

I have seen at home using a paste of drumstick leaves as an anti-inflammatory medicine. Drumstick leaves soup is extremely good for the prevention of asthma, bronchitis, tuberculosis.  It is used for the treatment of pimples, age spots and black heads when the drumstick leaves extract is mixed with lemon juice.

Not only the leaves but the whole drumstick plant is having medicinal value.
