Mixed Vegetable Rava Upma – a healthy breakfast item

Mixed Vegetable Rava Upma is a very delicious and healthy breakfast to start the day off. Undoubtedly this dish can be prepared easily. It is one of the famous South Indian breakfast items. Rava Upma can be made with lot of vegetables. Some prefer to cook plain, some use mixed vegetable with different variations of carrot beans, tomato, potato, cauliflower, fresh peas, etc.. Upma tastes the best when it is cooked in ghee, but it can be excused on health reasons. The texture of the Upma will depend on the correct measurement of water used, quality of the roasted Rava, ingredients used for tempering, variety of vegetables, etc.

It is an ideal healthy breakfast for diabetics. Please avoid using potato in that case and use steamed vegetables instead of stir fry.

Ingredients:

  • Rava  – 1 cup (dry roasted)
  • Boiling water – 11/4 cup
  • Cut vegetables – 1 cup (carrot, beans, potato, and cauliflower)
  • Turmeric powder – 1/8 tsp
  • Kashmiri Chilly powder – 1/2 tsp
  • Salt to taste

for tempering:

  • Oil/ghee – 2 tsp
  • Mustard seeds – 1/4 tsp
  • Curry leaves – few
  • Dried Red chilly – 3-4, halved
  • Asafoetida – a pinch (optional)
  • Shallots – 3-4, finely chopped

For Garnishing:

  • Coconut scraped – 1/4 cup (optional)
  • Cashew nuts/peanuts fried – 8-10 (optional)

Method of Preparation:

  • Heat oil/ghee in a pan, splutter mustard seeds and fry the remaining item given in tempering
  • Stir in the vegetables, add turmeric powder, chilly powder and salt to taste
  • Stir fry the vegetables and the powders until its raw smell disappears
  • Cover and cook the vegetables without water
  • Once the vegetables are done, add the boiling water and stir in Rava little by little
  • Mix well and adjust the salt, cover and cook over medium heat for 2-3 mins
  • Turn off the heat, mix well and cover and keep it on the stove itself for another 2 mins
  • Stir in coconut scraped and serve hot with any non-spicy chutney of your choice

Note:

  • Upma will be sticky if Rava is not roasted properly
  • Upma will have lumps if Rava is not stirred in little by little and the water measurement is not correct
  • Use 1:1 proportion of Rava and Boiling water for a dry Upma.
